Now what to do with the mortadella I made a few days ago? Normally it is used sliced as a cold cut or as a part of an antipasti platter, it is also wondeful cubed along with an apertif. But mortadella can also be fried which makes it a great hot snack.
I am not really a fan of classic burgers (of the ground meat kind) because I prefer my steak whole. But you can make a very nice quick “burger” with a thick slice of mortadella and a few other ingredients.
Ingredients (for two burgers):
- 2 ciabatta rolls
- 2 slices of mortadella, 1 cm thick, cut to fit the rolls
- 1 handful of rocket
- 1 piece of parmesan cheese
- 1 tablespoon tomato paste
- 1 tablespoon liquid honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- Cayenne pepper (optional)
Blend together tomato paste, honey and vinegar in a small bowl, adjust proportions if you prefer them differently. Add salt and pepper to taste and a bit of cayenne pepper if you like.
Heat the olive oil in a skillet and fry the mortadella slices on both sides until they have a light brown and crisp surface. Blend a bit of the oil into the sauce.
Cut the rolls in halves, spread some sauce on the bottom half so the pores are nicely soaked, then cover with rocket. Place a mortadella slice on top and spread a little more sauce onto the sausage. Top generously with parmesan shavings using a slicer. Finally put the top half of the roll on top.
